Uraga's washed coffees are prized for crystalline clarity: bright citrus acidity, delicate jasmine florals, lemon and bergamot, and a clean black-tea finish. Cherries are typically depulped within 12 hours and fermented for 36–48 hours. This Washed Uraga lot was scored 85+ on the SCA scale.

Bensa sits above 1,900 metres in Sidama Regional State — where cool nights slow cherry maturation and let sugars build deep inside the fruit. Dried whole on raised beds under the Ethiopian sun, these naturals develop a pronounced wine-like fermented character: intense berry aromatics, a heavy syrupy body, and layered fruit that unfolds as the cup cools.

Bensa's naturals are prized for their fruit intensity: dried strawberry, blueberry, dark chocolate, and jam-like sweetness over a winey, moderate acidity. Ripe cherries are hand-sorted and dried whole for 15–21 days on raised beds, turned regularly to prevent fermentation defects. This Natural Bensa lot was scored 82+ on the SCA scale.
